Protein-packed 5am BreakfastThere's nothing better than getting a full meal in a muffin. I baked these the night before a flight to Austria, and it's a breakfast muffin that you can really feel good about- full of protein, veggies and healthy fats! Super delicious with all of the toppings as well, and you can kind of throw whatever you want on the muffin... I paired it with granola and a whole bunch of different seeds as well as coconut sugar. They are easy to digest and filling, and I packed them for the flight. Usually I get a stomach ache on flights and try to eat light, but these muffins were just perfect. Besides munching on them during the flight, I also had them for breakfast (at 5:30 am!) with some coconut yoghurt. Some people say that they can't really stomach food early in the morning, but these muffins just hit the SPOT! Dry ingredients
2 tbsp protein powder 2 tbsp coconut flour 1 cup all purpose gf flour 2 tbsp hemp seeds 1/4 tsp salt 2 tsp cinnamon 1 tsp baking soda Wet ingredients 1/3 cup maple syrup 1 tsp vanilla 1/2 cup nut milk 1/4 cup almond butter 1 tbsp olive oil Juice from 1/2 lemon 1 cup of grated carrots 2 eggs To top: coconut sugar, cinnamon, desiccated coconut, granola or sunflower seeds method
