A Rich and Chewy Take on my FavouriteThese cookies are delicious, smooth and rich with dark chocolate chunks. A rocky day in quarantine full of ending: our last senior meeting, an award ceremony that felt distant and a prom which sputtered along on a low budget version of zoom made me feel quite down. However, these cookies took me 10 minutes to make up in the kitchen and sat in the fridge for a bit while I did a peloton strength workout on our free trial. That was the key to picking up my day! I miss my friends and peers terribly and I think that the realization of this long summer is really setting in. But, baking can continue, as does life. Even without baking soda, you can still use self-raising flour as I did in this recipe. With chocolate chip cookies in hand, you can do anything. Well, almost. Here I am to share my fixer-upper classic chocolate chunk cookies with a little bit of a peanut butter spin on them. I hope that they brighten up your day as much as they did mine! ingredients
6 tbsp coconut oil 1 cup coconut sugar 1/2 cup buckwheat 1/4 cup almond 1/2 cup self raising flour 1/4 cup peanut butter 1 tsp vanilla 2 eggs 1/4 cup cashew yoghurt 1 1/2 chocolate chips method
