Quarantine Easter!I love Easter. We used to have these lovely Easter morning services at the beach when I was living in Dubai with my church, Fellowship of the Emirates. It was lovely to have a stress-free Easter this year with my family, and my brother decided that we would have a multi-event sporting competition over the weekend with my whole family... and I was still on crutches, so I was the referee. And I baked! I miss being able to stroll down to the local mosque, which had a few small convenience stores and a "bakery" (?). It was just a few immigrant workers who baked huge pieces of flatbread in their stone oven, and each piece was around a quarter and almost larger than my torso. It was the best bread that I have ever consumed, and I could eat them forever. I was itching to make bread for Easter, but we didn't have any yeast at home so I started to search for non-yeast bread, and came across Arman Lieu's 2-ingredient bread- perfect! It was simply delicious with hummus, veggies and tofu, which was a perfect light Easter Sunday lunch before a roast dinner. method 1. Combine the yoghurt and self-raising flour together in a large bowl and powder a surface with more flour. 2. Add in the salt and knead together with clean hands until throughly mixed and form into a large ball. 3. Split the dough into 10 smaller balls and roll them on the floured surface until round, with extra flour as needed. Use your hands to flatten the dough and form your "naan". It works best when very thin, and I like my naan on the crispier side, so I flatten them to around .5 cm max. 3. Heat a non-stick pan over a stove at medium/high heat for a few minutes. If desired, lightly brush both sides of the naan with oil and press fresh herbs into the dough or sprinkle on black pepper before putting it into the pan. 4. Cook for 4-5 minutes before flipping, cooking each side until small golden brown pockets appear. Repeat with each piece of naan, and enjoy!
