Blender Muffins in Under 10!I followed KaleJunkie's genius Strawberry Banana Chocolate Chip muffin recipe and tweaked some of the ingredients to create a completely different, crunchy peanut buttery muffin. I also used buckwheat and almond flour, and added some almond milk, cinnamon and baking soda to the recipe to make the muffins super smooth and fluffy, and to balance out the protein powder I added. I think that using unflavoured pea protein was a really good bet for this muffin as you couldn't tell at all that there was protein powder in it, as you sometimes can with powders that have stevia added to them. It's a rich, creamy and fluffy muffin with a caramelized banana slice on top. If I were to make these muffins again, I would layer banana slices across the whole top and cover it with cinnamon sugar, because it the caramelized banana really perfected the muffin. Throughout all of quarantine, I had been itching to make banana bread or banana muffins, but although we buy two dozen bananas whenever we go shopping, they are always gone within a couple days, max. And my thirteen-year-old brother is fully responsible. So, when there were two ripe bananas in the fruit bowl, I grabbed them and ran to the blender to make these super simple and almost mess-free muffins.
